Surfactants are usually amphiphilic organic compounds containing both hydrophobic group (tail) and hydrophilic groups (head). Like synthetic surfactants, biosurfactants are excellent emulsifiers and maintain wetting and foaming properties, characteristics that are valued in several applications including household detergents and cosmetics industry.
